We are used to associating coffee with a hot drink, but this is not always like this. The cold brew method that was invented in the 16th century has recently become popular again. In this article we want to talk about how to make cold brew coffee and what is it.

What is cold brew?

It is a method of making coffee that considers brewing it with cold or ice water instead of hot. The result is a concentrated drink with a bright coffee flavor and high caffeine content. Cold brew is mostly prepared in the warm seasons and drunk chilled from the refrigerator.

Cold brew is often used as a base for other coffee drinks. The concentrate can be stored in the refrigerator for about 7-14 days, depending on the method of preparation.

The history of cold brew

There are two main versions of creation.

According to historians, the original recipe for cold brew was invented by Dutch traders in the 16th century. It helped them transport already prepared drink. However, records of this are poorly preserved. The first quality records of cold brew coffee were found in Kyoto (Japan). According to the records, the Japanese started to make cold brew coffee in the 17th century. That is exactly the recipe that coffee is made now: cold water was dripped through ground coffee for a long time.

With the advent of easier access to heating equipment and advances in technology, cold brew was replaced by hot coffee.

Cold brew began to gain popularity again in the 60s of the last century. Back then, Todd Simpson saw how the people of Peru brew coffee using the cold method, and warm it up before serving. He noticed that the coffee was softer and less acidic, so he decided to come up with his own coffee brewing device.
In the 70s, Japanese businessman Tadao Ueshima launched his line of canned coffee drink. His corporation Ueshima Coffee Co. took a lot of effort, time and money to promote new product. The main problem was that because the Japanese did not want to drink coffee in cans. 10 years later, in the late 1970s, canned coffee gained popularity and became a mass consumer product in Japan.

Cold brew has become popular over the past 10 years.

Dripping - coffee is slowly brewed drop by drop in a special vessel. For brewing, a special device (consisting of several containers that are installed one above the other) is used. Cold water is poured into one, ground coffee is poured into the other, and the third is left empty for the future drink. Water from the upper container drips into the lower one, passes through the coffee, is brewed and flows down to the lower one. The whole process takes up to 24 hours.
