Traditionally, to make coffee Vietnamese use a
phin filter – traditional coffee brewing tool. This method of brewing coffee firstly appeared in Vietnam nearly two centuries ago.
Phin filter is made of stainless steel or aluminum and looks like a small cup with a lid. There is a press filter inside the phin and a lot of small holes in its bottom. Through these holes, coffee is spilled into the cup.
Phin filter works the following way. It is placed on top of the cup, then 2 tablespoons of freshly ground coffee are poured into it. Coffee in phin should be slightly doused with hot water (about 90-93 °C) and compressed with a press filter. Carefully pour hot water into phin (4 times by 50 ml), and coffee will slowly drip into your cup.
